
Springfield, IL-(Effingham Radio)- Celiac disease is an autoimmune disorder triggered by gluten, a protein found in wheat, rye, and barley. When individuals with celiac disease eat gluten, their immune system attacks the small intestine, causing inflammation and damage. This damage impairs the ability to absorb nutrients, leading to a variety of symptoms.
In the Illinois House, a bill sponsored in the House by State Representative Regan Deeering (R-Decatur) was passed which will bring more attention to the disease when it comes to food handling. The Senate sponsor was inspired to propose the bill after one of her staffers was diagnosed with celiac disease.
Proper training ensures that food handlers understand the importance of preventing cross-contamination and can safely prepare gluten-free meals, thereby protecting the health of these individuals.
Illinois currently requires food allergen training. Illinois mandatory food allergen training covers the nine major food allergens defined by state law, which align with federal standards.
