Deer Season Recipe (Texas Style Stew)

Well, again the first firearm deer season starts THIS FRIDAY!!! And boy am I
pumped and excited!! 11/21-11/23/2014.

Here is a wonderful recipe for a Texas Style Deer Stew...Learned how to make
this from some family member down in San Antonio, TX. This works for Elk and
Beef as well. Try it out. There are a few ingrediants, but definitely worth it.

Also, if you have any recipes you would like to share let me know and I will get them
on here. I will be sharing recipes with yall until deer season starts on Friday! Enjoy

Mouth Watering Texas Style Old Fashioned Deer Stew:
  • 2-3 pounds venison cut into bite-sized pieces (see Note, below)
  • 3 tablespoons olive or canola oil
  • 2 medium onions, chopped
  • 2 cloves garlic, minced or put through a garlic press
  • 3 ribs celery, chopped
  • 1 8-ounce can tomato sauce
  • 1 cup beef bouillon
  • 1/2 cup dry red wine
  • 1 14.5-ounce can whole tomatoes, coarsely chopped, with juice
  • 6 carrots, chopped
  • 3 medium russet potatoes, peeled and chopped
  • 2 bay leaves
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground pepper

Directions:

Over medium heat, brown the venison in the oil. Add the onion, garlic and celery and simmer, stirring frequently, for 5 minutes or until onion is transparent.

Add the tomato sauce, bouillon and red wine. Lower heat and simmer, covered, for 1 hour.

Add the canned tomatoes, carrots, potatoes, bay leaves, salt and pepper. Cover and cook for 30 minutes or until potatoes and carrots are tender. Check seasonings and add salt and pepper, if desired. Remove bay leaves before serving.

***Makes 6 servings***

*NOTE: Which venison cut to use? Hind and fore shanks are good for stew, but the shoulder, or chuck, will be more tender and flavorful.

Deer Season and Recipes

Well, it is almost that time of year again to start off the first firearm deer season
and I will be on a buddy's farm of mine in Southern Illinois. 1500 acres!!!
This is my first year going to Southern Illinois, and hopefully my best year yet.
Spending my nights in a cabin in the woods down by Shawnee National Forest,
drinking some....sauce. haha. And my days in the frigid cold waiting for that perfect
deer to meet the end of my barrel.

And with that being said....Have you ever heard your other half, friend, etc. say deer
meat is "too gamey for them?" Well, here is a recipe my family uses to cut back on
that gamey taste AND will tenderize your meat as well:

**Mix 1/2 cup vinegar and water. Soak meat in mixture for 2 hours. Rinse meat and cover with milk. Soak in milk at least 2 hours. I always leave mine in milk overnight. Great for frying steaks, makes them really tender. Prepare meat with salt, pepper and flour. We like onion and garlic powder as well. Fry as you would tenderized steak.**
